  1. Preheat oven to 400.F. Spray a baking sheet with vegetable cooking spray.
  2. In a small bowl, combine bread crumbs and parmesan.Mix well.
  3. Dip zucchini in egg whites. Dredge zucchini in some bread crumb mixture, patting so crumbs adhere. Place on prepared baking sheet. Reserve remaining crumb mixture.
  4. Bake, turning once, until golden, about 15 minutes.
  5. Meanwhile, spray a 2-quart baking dish with vegetable cooking spray. Combine tomatoes and Italian seasoning in prepared dish. mix well.
  6. Arrange baked zucchini over tomatoes. Sprinkle with mozzarella and remaining crumb mixture. Bake until casserole is heated through and cheese melts, about 10 minutes. Serve immediately.
