Ingredients:

  • 1 cup sugar
  • 1 tsp vanilla
  • 1/4 cup canola oil
  • 2 cup flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 3 tbsp buttermilk

Directions:

  1. Preheat oven to 400.
  2. Grease 12 muffin tins and 1 mini-loaf pan
  3. In a large bowl, combine the oil, sugar, and vanilla and stir until lightly thickened.
  4. Fold in the zucchini.
  5. In a smaller bowl, sift together the flour and spices. Add to the wet mixture until just blended. Add buttermilk and applesauce. Stir just until blended. Do NOT overmix.
  6. Pour batter into the muffin cups and loaf pan.
  7. Bake for 5 minutes at 400, then reduce to 350 and bake for 15-20 minutes longer.
