Ingredients:

  • 1 1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup sugar
  • 1 cup zucchini
  • 1/4 cup oil
  • 1 egg

Directions:

  1. Mix dry ingredients together- flour, baking powder/soda, spices and salt
  2. In seperate bowl, mix sugar, shredded zucchini, egg and oil.
  3. Add dry mixture to wet mixture and bake in 350 degrees for 55-60 minutes
