Ingredients:

  • 2 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 1 cup zucchini
  • 1 tsp vanilla
  • 1 1/2 tsp ground cinnamon
  • 1/2 cup chopped nuts

Directions:

  1. Boil zucchini in water till done.
  2. Drain.
  3. Beat eggs, add sugar and oil.
  4. Combine all ingredients with zucchini.
  5. Pour into a greased standard loaf baking pan.
  6. Bake at 325 degrees for 55 minutes.
  7. Makes 1 loaf.
