Ingredients:

  • 2 tbsp salt
  • 2 lb mini -potatoes they are like bite size unpeeled (approx ,size is - 1 -1/2 to 2 inches long)
  • peanut oil for deep frying

Directions:

  1. MIX THE CHILI POWDER AND SALT AND PUT IT ON A PLATE, SET ASIDE.............
  2. BOIL THE POTATOES WHOLE -IN SALTED WATER UNTIL TENDER BUT NOT FALLING APART, ............DRAIN
  3. HOLD EACH POTATO IN A DRY CLOTH AND PULL OFF SKIN GENTLY USING THE BACK OF A KNIFE.
  4. AS EACH ONE IS PEELED ,ROLL IT IN THE SPICY SALT MIXTURE, PRESSING IT INTO THE SURFACE UNTIL COATED WELL, ( YOU MUST DO THIS WHILE POTATOES ARE STILL DAMP) SET ASIDE
  5. FILL A WOK - ONE -THIRD FULL OF THE OIL AND HEAT TO 375 DEGREES F. OR FILL A DEEP FRYER THE RECOMMENDED LEVEL.
  6. ADD THE POTATOES IN SMALL BATCHES, AND FRY FOR 2 - 3 MINUTES OR UNTIL GOLDEN BROWN.
  7. REMOVE POTATOES AND DRAIN, AND SERVE
  8. MAKES ABOUT 12 ( CAN DOUBLE OR TRIPE THE RECIPE)
