Ingredients:

Directions:

  1. Beat eggs and season with salt and pepper.
  2. Heat oil in a large heavy skillet over moderate heat.
  3. Sauté scallions and chili pepper stirring frequently for 2 minutes.
  4. Add crab and fish sauce and cook an additional 3 minutes.
  5. Remove this mixture to a small plate.
  6. Add more oil to the pan if necessary.
  7. Pour beaten eggs into same pan.
  8. Cook using a fork to draw cooked eggs away from the edge allowing uncooked eggs to flow back towards the edge.
  9. Cook until firmly set on the bottom and creamy on top.
  10. Spoon crab mixture down the center of the omelet and fold it in half.
  11. Turn omelet onto a heated serving platter.
