Wild Rice With Dried Apricots And Cranberries

Ingredients:

Directions:

  1. Rinse wild rice in fine strainer under cold running water. Drain; set aside.
  2. Combine wild rice, 1 1/2 cups chicken broth and apple juice in 2-quart saucepan.
  3. Bring to a boil over medium-high heat. Reduce heat to low; simmer, covered, about 1 hour or until rice is tender.
  4. Drain; set aside.
  5. Combine white rice and remaining 1 1/2 cups broth in seperate 2-quart saucepan.
  6. Bring to a boil over medium-high heat. Reduce heat to low; simmer, coverd, 12 to 15 minutes.
  7. Stir in raisins, apricots and cranberries; simmer 5 minutes or until rice is tender and fluffy and liquid is absorbed.
  8. Remove from heat. Let stand covered 5 minutes or until fruit is tender; set aside.
  9. Melt butter in large skillet over medium heat.
  10. Add onion; cook and stir 5 to 6 minutes until tender.
  11. Stir in pecans.
  12. Cook and stir 2 minutes.
  13. Add wild rice and white rice mixtures to skillet.
  14. Stir in parsley; cook and stir over medium heat about 2 minutes or until heated through.
  15. Garnish with fresh thyme, orange slices and whole cranberries, if desired.
