Ingredients:

  • 1 1/4 cups fat free milk
  • 1 egg
  • 2 tbsp corn oil
  • 1/2 tsp salt
  • 2 tbsp sugar

Directions:

  1. Prepare griddle, using a low-fat, low-cal spray if necessary to prevent sticking.
  2. Place milk, egg, oil, salt and sugar in a large bowl.
  3. Mix on medium speed until well blended.
  4. Add flour and baking powder.
  5. Mix on medium speed until well blended.
  6. Do not over mix.
  7. Pour 1/4 cup of batter at a time onto hot, prepared griddle and bake first side until bubbles come up evenly and the edges are just starting to brown. Flip over and bake for just a few moments.
