Eggplant Fritters

  1. Place peeled and cubed eggplant in enough water for boiling until tender, about 10 minutes covered
  2. Drain well and mash the eggplant when done
  3. Stir in egg, onion, salt, and pepper
  4. Mix flour and baking powder, and stir into eggplant mixture
  5. Add enough milk to make a drop batter
  6. Drop batter by tablespoons into oil heated to 360 degrees or over a medium heat
  7. Cook until brown and drain on absorbent paper
