White Chocolate Chip Pumpkin Muffins

Ingredients:

  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1/4 cup water
  • 1 1/2 cups all purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cloves
  • 1/4 to 1/2 cup of white chocolate chips depending on preferences
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt

Directions:

  1. Grease 8 large or 12 small muffin tins.
  2. In large bowl combine the sugar and oil.
  3. Add the eggs and beat well.
  4. Mix in the pumpkin and water.
  5. Combine the dry ingredients and add to the creamed mixture.
  6. Mix only until all ingredients are just moistened.
  7. Pour the batter into the prepared muffin tins.
  8. Bake in a 400 degree oven for 20 - 25 minutes.
  9. Makes 8 large or 12 small muffins.
