Ingredients:

Directions:

  1. Heat oil and cook onion, chilli and capsicum till soft.
  2. Add cumin and cook till fragrant.
  3. Stir in corn, milk and beans.
  4. Reduce heat to low and simmer for 15 - 20 minutes till mixture is thickened.
  5. Add chicken and heat through for 3 more minutes.
  6. Season with salt and pepper and stir in coriander.
  7. Serve with rice.
