Wheat, White and Oatmeal Waffles

Ingredients:

  • 4 eggs
  • 3 1/2 cups milk , warmed gently so it won'tsp re-harden the butter
  • 2 1/2 cups whole wheat flour
  • 3/4 cup old fashioned oats , pulsed a few times in a food processor
  • 8 tsp baking powder (or 2 tbsp plus 2 tsp)
  • 1/2 tsp salt
  • 2 tbsp sugar

Directions:

  1. Beat eggs with hand mixer until fluffy.
  2. Add other ingredients all at once. Mix just until blended.
  3. Let batter rest for 5 minutes while waffle iron heats.
  4. Bake in iron for about 5 minute or until steaming stops. These are best crisp!
