Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 2 tsp cinnamon
  • 1 tsp salt
  • 4 large eggs
  • 1 cup chopped walnuts (optional)
  • 1/2 cup butter
  • 1 box confectioners' sugar

Directions:

  1. Preheat oven to 350 degrees.
  2. Sift all dry ingredients together into large bowl.
  3. In medium bowl add oil and eggs, whisk until blended.
  4. Pour egg mixture into dry ingredients and stir well.
  5. Mix shredded carrots w/vanilla and fold into mixture.
  6. Pour batter into 13x9 cake pan and bake for approximately 45 minutes (or do the toothpick test).
