Welsh cakes (Aussie style)

Ingredients:

  • 125 g margarine
  • 1 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 cup currants

Directions:

  1. Mix dry ingredients together, add margarine mixing with your fingers.
  2. Mix milk and egg until smooth.
  3. Roll out into 1/2 inch thichness.
  4. Cut with a cookie cutter.
  5. Spray a baking tray with oil.
  6. Place uncooked mix onto the tray leaving spaces for expansion when cooking.
  7. Place in oven for 15-20 minutes or until golden brown.
  8. Oven heat should be between 160 and 180 degrees.
