Watkins Chocolate Zucchini Bread

Ingredients:

  • 2 1/2 cups flour
  • 1/2 cup cocoa
  • 2 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup vegetable oil
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1 cup nuts (optional)
  • 1/2 cup milk

Directions:

  1. Combine dry ingredients.
  2. Beat sugar & oil until blended.
  3. Add eggs one at a time.
  4. Stir in vanilla & zucchini.
  5. Add dry ingredients alternately with milk.
  6. Add nuts.
  7. Pour all into greased & floured bread pans.
  8. Bake at 350 degrees for 1 hour or until toothpick comes out clean.
  9. Cool in pans 15 minutes then turn out onto wire racks.
  10. When cool sprinkle the tops with powdered sugar, if desired.
