Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 1/4 cups vegetable oil
  • 4 eggs
  • 1/2 cup nuts (i used wal )
  • 2 tsp vanilla
  • 1 (16 oz) container cream cheese frosting

Directions:

  1. Combine flour, sugar, baking powder, baking soda. salt, and cinnamon in a large bowl. Mix until blended.
  2. Add oil to flour mixture while mixing. Then add the carrots and eggs, one at a time, mixing well after each addition.
  3. Stir in nuts and vanilla; mix well.
  4. Pour into a well greased and floured 9X13 pan. Bake in a preheated 350°F oven 50 to 60 minutes or until done.
  5. Allow to cool thoroughly. Frost with frosting.
