Warm Potato Salad With Smoked Sausage

Directions:

  1. Cook potato in boiling water to cover in a large Dutch oven over medium-high heat 15 to 20 minutes or until tender; drain and cool slightly. Cut into 1/4-inch-thick slices, and place in a large bowl.
  2. Brown sausage in Dutch oven over medium-high heat, stirring occasionally, 5 minutes. Add red wine, and cook 5 minutes. Drain sausage, and add to sliced potato.
  3. Saute mushrooms in 2 tablespoons hot oil in Dutch oven 5 minutes or until liquid evaporates. Sprinkle with lemon juice and 1 1/2 teaspoons pepper sauce, tossing gently. Add mushroom mixture and green onions to potato mixture.
  4. Process remaining pepper sauce, chicken broth, and next 4 ingredients in a blender or food processor until blended. Turn blender on high; add 2/3 cup oil in a slow, steady stream. Pour over potato mixture, tossing gently. Serve warm.
