Ingredients:

Directions:

  1. Cook potatoes in salted water until just tender, drain.
  2. Toss potatoes with onion, Crème Fraîche, lemon juice, parsley, chives and Chunky Cottage Cheese.
  3. Season with salt & pepper.
  4. Arrange the rocket or baby spinach leaves on individual plates or one large salad platter.
  5. Spoon the potatoes onto the rocket leaves.
  6. Serve warm.
