Vietnamese Chicken Salad

Ingredients:

Directions:

  1. Salad Directions:
  2. Grill chicken breasts under broiler 4 inches from source of heat until cooked on both sides, about 35 minutes.
  3. Remove skin and slice diagonally into thin strips.
  4. Cook noodles according to package directions,drain, and rinse in cold water.
  5. Toss with small amount of peanut oil to prevent sticking. Set aside.
  6. Mix sliced cabbages and cilantro.
  7. Toss noodles with just enough Peanut Dressing to coat lightly. Place on serving plates.
  8. Top with cabbage mixture.
  9. Place chicken over cabbage.
  10. Sprinkle with peanuts.
  11. Top with more dressing or serve on side for dipping chicken.
  12. Makes 8 servings.

  15. Combine vinegar, peanut butter, ginger, sesame oil,
  16. Green onions, sugar, soy sauce and cilantro
  17. Makes 1 3/4 cups dressing
