Ingredients:

Directions:

  1. Cover meat with salt pork.
  2. Rub with flour, salt and pepper.
  3. Melt bacon fat in large pot; brown meat.
  4. Remove meat and brown 2 tablespoons flour in pot.
  5. Set meat in pot; add water and seasonings.
  6. Cover and simmer until nearly tender.
  7. Place vegetables around and over meat; continue cooking until vegetables are tender, about 45 minutes.
  8. Serve the roast on a platter surrounded with vegetables.
  9. Thicken the gravy and serve.
