Ingredients:

  • 3 tbsp butter
  • 3 tbsp flour
  • 1 tsp salt
  • 1/2 tsp italian seasoning
  • 1/4 tsp pepper
  • 1 (14 oz) can chicken broth
  • 2 tbsp oil
  • 6 cups thinly sliced peeled potatoes
  • 1 medium onion, sliced
  • 1/2 tsp paprika
  • 1/2 tsp parsley

Directions:

  1. In med saucepan, melt butter; stir in flour, salt, italian seasoning, and pepper.
  2. Add broth; cook and stir until mixture boils.
  3. Cook for 1 minute more.
  4. Remove from heat and set aside.
  5. In skillet, brown chops in oil; season with additional salt and pepper if desired.
  6. Layer potatoes and onion slices in a greased 13x9 baking pan.
  7. Pour the broth mixture over.
  8. Put chops on top.
  9. Cover and bake at 350* for 1 hour.
  10. Uncover and bake an additional 30 minutes.
  11. Sprinkle with paprika and parsley.
