Vegetable Polenta Pot Pie

Ingredients:

  • 1/3 cup margarine
  • 1/3 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 3/4 cups vegetable broth
  • 2/3 cup soymilk
  • 1 (16 oz) package frozen mixed vegetables
  • 1 1/2 cups cooked rice
  • 1 (18 oz) package prepared polenta

Directions:

  1. Preheat oven to 350°F.
  2. Melt margarine over medium heat.
  3. Stir in flour, onion, salt, pepper and taco seasoning. Cook, stirring constantly, until mixture is bubbly. Remove from heat.
  4. Stir in broth and soy milk. Heat to boiling, stirring constantly, then boil and stir for 1 minute.
  5. Stir in mixed vegetables, beans and rice; remove from heat. Pour mixture into 2-quart casserole pan.
  6. Cut polenta into 1/2-inch discs and arrange on top of vegetable mixture.
  7. Cook 35-40 minutes until bubbly.
