Vanilla and Coconut Muffins

  1. In large bowl mix together flour, coconut, baking powder and brown sugar.
  2. In separate bowl mix together butter, milk, egg and vanilla.
  3. Make well in centre of dry ingredients and add milk mixture.
  4. Stir to just combine.
  5. Spoon batter into prepared muffin pans and bake at 190 C for 10-15 minutes.
  6. Top with vanilla icing and sprinkle with coconut.
  7. To make icing mix ingredients together.
