Uncle Hugo's Chicken

Ingredients:

  • 1/4 cup parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup butter

Directions:

  1. Mix the dry ingredients together in a 1-quart mixing bowl and set aside.
  2. In a 1-quart sauce pan, heat butter and garlic over low heat until butter melts. Remove from heat.
  3. Coat chicken pieces with the butter mixture then thoroughly coat with dry mixture.
  4. Put chicken on an ungreased cookie sheet, skin side up.
  5. Mix together the remaining dry ingredients and the butter mixture together. Sprinkle over the chicken.
  6. Bake at 350° for 1 hour. For crispier chicken cook an additional 15 minutes.
