Ingredients:

  • 6 slices bacon
  • 3 tbsp butter or 3 tbsp bacon drippings
  • 1 cup cornmeal
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sugar
  • 3 1/2 cups milk, scalded
  • 1/2 cup light cream

Directions:

  1. Fry bacon until crisp.
  2. Add onion and saute.
  3. Remove bacon and onion.
  4. Bacon drippings can be used instead of butter.
  5. On low heat, gently stir in the cornmeal and stir so it is coated.
  6. Add salt, pepper, and sugar.
  7. Scald milk and add it gradually, stirring constantly, until bubbly and all the milk is gone.
  8. Simmer until thickened.
  9. Remove from heat and add eggs, cream, bacon pieces, and onion.
  10. Fold gently.
  11. Pour into 2 quart casserole and bake uncovered in oven for 1 hour at 350 degrees F.
