Ingredients:

Directions:

  1. Mix first five ingredients in large bowl.
  2. Start heating oil in skillet.
  3. Wrap half the tortillas in very damp paper towels and microwave for 2 minutes.
  4. Start filling and rolling each tortilla with turkey or chicken mixture. Make about 6 at a time and fry.
  5. You can carefully place them into the skillet, seam side down, using tongs, or you can secure them with a toothpick if you like, before frying.
  6. Brown on one side and then turn over and brown lightly on the other side.
  7. Remove to wide bowl, lined in paper towels, to absorb excess oil. I shake them pretty well above the skillet before standing them on end in the bowl.
  8. Repeat microwave procedure with the rest of the tortillas. Fill, roll, fry, drain.
