Ingredients:

Directions:

  1. Heat oil in a large soup pot.
  2. Saute onion & green pepper until onion slices are translucent.
  3. Add carrots, potatoes, celery & spices.
  4. Mix well.
  5. Add stock & simmer for 15 min until potatoes & carrots are soft.
  6. Add turkey, corn.
  7. Heat thoroughly but don't boil.
  8. Just before serving stir in parsley.
  9. May add salt & pepper at this time to taste.
