Turkey Cantaloupe Salad

Ingredients:

Directions:

  1. Cut turkey into 2 pieces, each about 8 by 2 inches
  2. Brush one t oil evenly over all sides of turkey
  3. Season with 1/2 t pepper
  4. Wrap 1 slice bacon around each piece in a spiral fashion
  5. Grill over medium-high direct heat for about 20 to 25 minutes until meat is no longer pink
  6. Cover with aluminum foil and let stand 10 minutes
  7. Slice bacon and turkey crosswise into thin slices
  8. Combine lettuces, cantaloupe, red onion, grapes and cucumber in a large salad bowl
  9. Top with turkey and bacon
  10. Drizzle with dressing and toss gently to combine
  11. GINGER-LIME VINAIGRETTE
  12. Combine 4 T lime juice, 2 T orange juice,2 1/2 T honey, 2 t minced fresh ginger, 2 t oil and 1/4 t pepper in a small bowl. Whisk to blend well: set aside for about 30 minutes to allow flavors to blend
  13. Season lightly with salt
