Ingredients:

  1. 1. In a mixing bowl mix the 1 Tbs salt with the 2 cups cold water.
  2. 2. Peel, seed and cube the cucumber and put it in the salted water for 10 to 15 minutes, stirring two or three times.
  3. 3. Cube the Yellow fin (or whatever fresh tuna you’re using) and put in a separate bowl.
  4. 4. Add the lemon juice and fold a few times while your cucumbers are soaking.
  5. 5. when your cucumber is soaked drain well.
  6. 6. Add the rest of the ingredients to the fish and fold a few times leaving set for ten minutes or so.
  7. 7. Add the cucumber and fold some more. This gets better if you let it set in the fridge for 30 minutes or so but that’s optional.
  8. 8. Salt and pepper to taste and serve and enjoy.
  9. Don’t know why some folks get excited about raw fish. When I lived in Hawaii the local guys would take a fresh caught fish, gut and head it, take off the skin, smear some soy and wasabi on it and eat off the bone. Personally I always cut it off the bone in strips and ate it that way but that’s because my mama taught me good manners.
