Ingredients:

  • 1/3 cup sugar
  • 2 eggs
  • 3/4 cup whole milk
  • 1/2 cup pecan pieces (any nuts will work)
  • 1/4 cup melted butter
  • 1/2 tsp. vanilla
  • 1 tsp. salt (optional)
  • for topping
  • 1/4 cup white sugar
  • 1/4 cup finely chopped nuts

Directions:

  1. Preheat oven to 375 degrees F. Combine flour, baking powder, sugar and salt. In a small bowl, beat eggs, milk, reserved fruit juice, butter and vanilla. Add to flour mixture and stir just until batter is moist. Gently stir in shredded coconut, diced peaches, pineapple tidbits and nuts.
  2. Combine topping ingredients in a small bowl.
  3. Grease and flour a 12 or 6 cup muffin tin or use paper liners (recommended). Fill baking cups 2/3 full. Sprinkle each with some of the topping. Bake approximately 20 minutes. Remove and cool on wire racks. Makes two dozen muffins.
