Tropical Carrot Raisin Salad

Ingredients:

  • 1 cup raisins
  • 1 cup walnuts
  • 1/4 cup finely chopped celery
  • 1/2 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp vinegar
  • 1/2 tsp white sugar
  • 1/4 tsp salt

Directions:

  1. In a medium bowl, combine shredded carrots, raisins, walnuts, celery, and coconut.
  2. Whisk together mayonnaise, sour cream, vinegar, sugar, and salt.
  3. Stir dressing into carrot mixture.
  4. Chill a few hours before serving.
