Tossed Salad with Lime Vinaigrette

Ingredients:

  • 4 cups torn salad greens
  • 1 small tomato, cut into wedges
  • 1/4 cup vegetable oil
  • 1/4 cup lime juice
  • 2 tsp sugar
  • 1/4 tsp salt

Directions:

  1. In a salad bowl, toss the greens, tomato and cucumber. In a jar with a tight-fitting lid, combine the oil, lime juice, sugar, onion, lime peel and salt; shake well. Pour over salad and toss to coat. Yield: 4 servings.
