Ingredients:

  • 1 lrg. lime
  • 1 1/2 lb. tomatoes (use roma if you don'tsp want super juicy salsa)
  • 1/2 small red onion
  • 1 small jalapeno chile
  • 3/4 tsp. salt
  • 1/4 course ground pepper

Directions:

  1. Finely dice tomatoes, onion, jalapeño (seed as well)
  2. Grate 1/2 tspn. lime rind into bowl, mix with 2 tbsp. fresh-squeezed lime juice in bowl
  3. Mix all ingredients together, cover and let marinade in fridge for at least one hour
