Tomato Feta Cumcumber Sandwich

Ingredients:

Directions:

  1. Combine yogurt, capers and feta in a small bowl.
  2. Add olive oil to saute pan and heat to medium.
  3. Place slice of bread in bottom of pan.
  4. Stack one layer each of tomato and cucumber slices on top of bread.
  5. Spoon two to three teaspoons yogurt mixture on top.
  6. Top with a second slice of bread.
  7. Grill on each side till golden brown.
  8. Salt to taste.
  9. Enjoy.
  10. Reserve remaining yogurt mixture for additional sandwiches or as a topping for chicken, beef or lamb.
