Tomato-Chipotle Grilling Sauce

Ingredients:

Directions:

  1. Heat oil in large pan and soften the onions slowly until translucent.
  2. Add the tomatoes, chipotles and water. Bring to a boil, reduce heat and simmer slowly until reduced a bit.
  3. Remove pan from heat and let cool.
  4. Using either a standard blender or a stick blender, puree the cooled sauce.
  5. Add lemon zest and cilantro.
