  1. 1. Soak dried tomatoes in enough boiling water to cover until softened, about 15 minutes. Drain tomatoes well, then finely chop.
  2. 2. In small bowl, with mixer at medium speed, beat cream cheese until light and creamy, about 1 minute. Stir in tomatoes, basil, Parmesan, and pepper.
  3. 3. On waxed paper, shape half of cheese mixture into 6-inch log; roll up in waxed paper. Repeat with remaining cheese mixture. Refrigerate until chilled and firm, at least 1 hour. Roll logs in pine nuts; wrap and chill 15 minutes longer. Makes two 6-inch logs, 12 servings each.
