Tomato Bacon Soup

Ingredients:

  • 6 slices bacon diced
  • 46 oz can tomato juice
  • 1/4 cup cornmeal
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions:

  1. In a 2 quart pot fry the bacon until lightly browned then drain off most of the fat.
  2. Add onion and sauté over medium heat until onion is transparent then add tomato juice.
  3. Heat to a simmer then add cornmeal stirring to avoid lumps.
  4. Cook until cereal is done approximately 25 minutes stirring occasionally.
  5. Add lemon juice, salt and black pepper then serve immediately.
