Tofu With Satay Sauce and Noodles

Ingredients:

Directions:

  1. Place the caster sugar, chili and water in a medium sized saucepan and heat gently stirring until the sugar has dissolved.
  2. Add the plums and cook for approximately 8 minutes over a medium heat, stirring from time to time.
  3. In another large pan, heat the sesame oil over a moderate heat, add the tofu, and seal on all sides.
  4. Add the plum mixture to the tofu and cook for a further minute.
  5. Add the satay sauce and bring to the boil. Remove from the heat.
  6. Add the noodles and continue to cook, stirring, until heated through.
  7. To serve - transfer to a heated serving platter and garnish with the chives and spring onions. Serve immediately.
