Ingredients:

  • 2 -4 cloves garlic, sliced (or add garlic pwdr w/spices)
  • 1 tbsp olive oil
  • 2 tsp basil
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Brown buffalo, drain grease and set aside.
  2. In large saucepan, saute onion and garlic in olive oil until tender.
  3. Add buffalo, tomatoes, spinach, basil and oregano.
  4. Heat through, mixing thoroughly.
  5. Add salt and pepper (to taste).
  6. Serve over rice or pasta.
  7. Or cover a pizza crust with tomato paste, top with this and mozz. cheese, and bake.
  8. Mmm.
