Ingredients:

  1. Halve & destone the avocados.
  2. Peel off the skin & cut flesh into small cubes, place in a bowl.
  3. Mix the lime juice in immediately to prevent discolouration,.
  4. Dice the tomato once deseeded & juice is removed.
  5. Toss with the avocado & add the minced chili.
  6. Finely chop the red onion & add to the rest of the ingredients.
  7. Finish by mixing in the coriander & any of the optional extras.
  8. Serve in a large bowl with a bowl of sour cream on the side.
  9. Or individual bowls with a spoon of sour cream on the top & a coriander leaf.
