Ingredients:

Directions:

  1. Bring red curry paste and coconut milk to a slow boil, stirring until blended (med high heat)
  2. Add fish sauce, brown sugar, and lime juice and reduce heat to meduim
  3. Add sliced vegetables and simmer until vegetable are soft, but not soggy (20 min)
  4. Add shrimp and simmer 5 min.
  5. Serve over cooked rice
  6. Add fresh cilantro and lime wedges as an option
