Thai Shrimp Red Curry

Easy Thai dish to make at home with a lot of flavor
Ingredients:
2 tbs of thai red curry paste
2 cans (14 oz each) light coconut milk
2 tsp of fish sauce
5 tbs of brown sugar
2 tsp of lime juice
1 zuccini
1 yellow squash
1 red bell pepper
1 # of shrimp
1 cup of rice
Directions:
1. bring red curry paste and coconut milk to a slow boil, stirring until blended (med high heat)
2. add fish sauce, brown sugar, and lime juice and reduce heat to meduim
3. add sliced vegetables and simmer until vegetable are soft, but not soggy (20 min)
4. add shrimp and simmer 5 min.
5. Serve over cooked rice
6. add fresh cilantro and lime wedges as an option
