Ingredients:

Directions:

  1. Bring water to boil, stir in rice, cover, remove from heat and let stand for 5 minutes.
  2. Put sour cream, cheddar cheese, and jalapeno peppers in to a food blender. Purée mixture until smooth and creamy.
  3. Pour mixture into rice, mixing well, then transfer to an 8 X8 baking dish.
  4. Grate an ounce or two of cheese on top of mixture.
  5. Bake uncovered at 350 for 30 minutes.
  6. Goes well with anything from breakfast to dinner. Great potluck dish.
