Tazukuri (dried Sardine) Recipe

Tazukuri (dried Sardine)

Ingredients:

  • 4 cups peanut oil
  • 1 (3 oz) package dried tiny sardines
  • 1/4 cup soy sauce
  • 2 tbsp water
  • 2 tbsp mirin
  • 3 tbsp sugar

Directions:

  1. In a wok or deep saucepan, heat oil to 360 F (180C).
  2. Place sardines in a large wire skimmer. Lower into hot oil.
  3. Fry 30 seconds. Drain on paper towels.
  4. In a small saucepan, bring soy sauce, water, mirin and sugar to a boil. Reduce heat to medium. Cook 5 minutes or until thick and syrupy
  5. Cool 3 to 4 minutes.
  6. Add sardines; mix well.
  7. Stir in sesame seeds.
