Ingredients:

  • 1 small red onion
  • 2 eggs
  • 1/2 cup flour
  • salt and pepper

Directions:

  1. Shred potatoes and onions together.
  2. Squeeze in a towel until dry.
  3. Add eggs, flour, and season to taste.
  4. Fry until golden brown.
  5. Serve with sour cream or apple sauce, if desired.
