Sweet Potato Waffles

Ingredients:

  • 2 cups cooed sweet potatoes
  • 1 cup milk
  • 2 tsp canola oil

Directions:

  1. Place sweet potatoes, milk, egg whites and oil in bowl of a food processor.
  2. Process until blended then add flour and baking powder and process until smooth.
  3. Preheat waffle iron according to manufacturer's directions.
  4. Coat grids with nonstick cooking spray.
  5. Add 3/4 cup of the batter and bake for 8 minutes.
  6. Repeat until all batter is used.
