Ingredients:

Directions:

  1. Peel and cook the sweet potatoes until fork tender.
  2. Combine 2 C coconut and cream in a saucepan, bring to a boil, remove from heat.Soak for 30 min, Press all liquid from coconut, discard pulp.
  3. Mash sweet potatoes.
  4. In the mixer, combine cream and sugar and beat until well mixed.
  5. Add sweet potatoes and mix until all lumps are gone and the consistency is light and fluffy.
  6. Fold in soaked coconut, blend well.
  7. Pour sweet potatoes in a greased 9x9 casserole.
  8. Bake at 400*for 15 minutes.
  9. Saute remaing coconut and sprinkle over top.
