Amish Sweet Potato Pudding

Ingredients:

  • 4 large sweet potatoes or yams (to make 3 cups mashed )
  • 3 tbsp. melted butter
  • 9 tbsp. sugar
  • 1 1/2 tsp. salt
  • 1 1/2 cups evaporated milk
  • 3 eggs

Directions:

  1. Bake potatoes in 400 degree oven for 45 minutes until soft.
  2. Scrap meat out of potatoes and mash
  3. Add butter, salt, sugar, and milk and beat until creamy
  4. Beat eggs and add them to mixture
  5. Put in a buttered 13x9 glass baking dish
  6. Bake at 350 for 1/2 hour
  7. Put marshmallows on top of casserole and continue baking for 15 minutes until golden brown.
  8. Make sure you put the baking dish on a foil lined cookie sheet or you could have a big marshmallow mess in your oven :-)
