Sweet Potato Pie

Ingredients:

Directions:

  1. Peel, chop and boil sweet potatoes
  2. Whilst they are boiling, heat the oil
  3. Fry the quorn mince for five minutes
  4. Add the red wine vinegar and cook for another 3 or so minutes
  5. Add the garlic and tomato pastes and cook for another couple of minutes
  6. Add the spice mix (either fajita mix or garam masala) and cook for a couple of minutes
  7. Add the tomatoes, stir well and simmer for 10-15 minutes till it starts to reduce
  8. Whilst the filling is reducing, drain the sweet potatoes and mash with the butter and milk
  9. Put the filling into a loaf tin
  10. Cover with the mash
  11. Sprinkle with the cheese
  12. Bake at 200C for 20minutes
