Sweet Corn And Tomato Salad With Fresh Cilantro

Ingredients:

Directions:

  1. Cook corn in large pot of boiling salted water until just tender. Drain, cool to room temperature.
  2. Cut corn kernels from cobs. Transfer corn to large bowl.
  3. Add remaining ingredients; toss to blend.
  4. Season salad to taste with salt and pepper.
  5. (Can be made 2 hrs. ahead. Let stand at room temperature, tossing occasionally)
  6. I love to serve this with wedges of lime. Enjoy!
